In order to develop more sustainable coffee farming and plant more disease- and drought-resistant beans, the company uses artificial intelligence (AI) to scan a publicly accessible digital database of coffee attributes, including cherry size, flavour and fragrance characteristics, and yield . According to a statement by Jeroen Dijkman, president of Nestlé's Institute of Agricultural Sciences, "it will help us identify key genetic markers in the Arabica genome that are responsible for specific traits in adult plants." "This will make it easier for our plant scientists and other specialists to recognize, pick, and develop new and enhanced arabica coffee varieties."
