Citric acid is a naturally occurring fruit acid, manufactured commercially by fermentation of a carbohydrate substrate by microorganisms. Anhydrous citric acid is the citric acid in a dehydrated or water-free form. Anhydrous citric acid lacks crystallization water. It is the most widely used organic acid and pH-control agent in beverages, foods, pharmaceuticals, and technical applications. Anhydrous citric acid is found as a white, crystalline powder or colorless crystals, both of which have a very acidic flavor. It is readily soluble in ethanol (96%), very soluble in water, and just slightly soluble in ether. Anhydrous citric acid has a low reactivity and is non-toxic. If it is kept at room temperature, it is chemically stable. Anhydrous citric acid is completely biodegradable and can be thrown away with regular trash or sewage. It is used in various applications such as food & beverages, health care, personal care, cleaners, industrial applications, feed & pet food, and pharmaceuticals.
